Pasta Fagioli

Ingredients

2 tablespoons Olive Oil

1 Onion

2 Carrots

2 Stalks of Celery

1 Cups of Beans (if using dry soak and soften on the stove top or use a pressure cooker)

1 15 ounce can of tomatoes chopped up liquid reserved

1 Bay Leaf, 1 tea spoon oregano, basil and parsley

1 quart liquid (I use water and some additional salt and pepper)

1 cup grated parmesan or Romano

Method

Heat the pot, heat the oil, cook the onion and add the other vegetables, beans and herbs.  Once the vegetables are soft add the tomatoes and the liquid (slowly).  Let it simmer for about half of an hour and add the small pasta.

I'm Francine Lynch and I decided to join the Personal Chef profession because I love to cook for people, yet I do not want to work in a restaurant. I like the fresh, local and healthy meals and the party food, which sounds like opposite ends of the food spectrum but to me it is the balance of life.

My food has integrity and I never use a powder mix or a can of soup in any recipe and I only use high quality fresh ingredients. I have had formal and informal training and I am continuing to take classes at Schenectady County Community College.

I am a graduate of The Culinary Business Academy in Atlanta and a proud member of the United States Professional Chef Association and am insured through them. I also am a member of Slow Food International.
